Demuerte Classic: Process
Demuerte Classic is a wine that is obtained from two types of grapes: Monastrell and Syrah. Each of them participates in fifty percent of the process, hence it is a wine with a high concentration of tannins and a spectacular maceration process.
These grape grains are grown in vineyards that the winery has in the area of Yecla (Murcia), where they grow vines over 15 years old that offer a small, select and high quality production. Grapes that are harvested by hand, following traditional guidelines, so that none of the fruits suffer damage and their ripening process outside the plant is delayed to the maximum.
Also, during its harvest, the harvest is stored in boxes of no more than 20 kilos of grapes. An example of how we take care of all the stages of the process of making our Demuerte wines, as they undergo a similar process at this stage of the work.
Once the must of the grapes is obtained we subject this first liquid to a maceration process. To do this, we first place them in stainless steel tanks at 24º C temperature. Subsequently, the wine undergoes a long maceration for 21 days in which it is taking body and where it is fermenting under our supervision.
After that time, the wine that will be with the passage of the months Demuerte Classic undergoes a subsequent aging in French Allier oak barrels for a minimum period of 9 months. A time of precise care in which we pay close attention to the temperature and all the conditions that we want to participate in its aging. A Demuerte wine is a little gem that we like to take care of regardless of the variety in question. And we don’t know how to do it in another way.
When the wine is ready we put it in a black, opaque, very elegant and sober bottle on which we glue a label on which we have screen printed a skull to Mexican taste with a thousand colors. A note of color with which it is further distinguished from its competitors and with which it underlines that it is a product with which to celebrate life on the table and in company.
Once made, Demuerte Classic is a violet red wine, with an intoxicating aroma reminiscent of red fruits with a soft background of oak and pastries. It is a wine that likes to drink since its passage in the mouth is soft and unctuous, so even people less fond of wine enjoy taking it.
To make the most of your drink it is best to serve it between 16 and 18 degrees Celsius at the table.
