To choose the best bottles of wine, the best thing is to know the variety that suits us best for each occasion. In this sense, we need to distinguish between:
- White wines: We must keep in mind that there are two main types of white wines. On one hand, there are young white wines, those from the current year; and on the other, there are the more complex ones, those that have fermented in barrels. The former are ideal to drink before a meal or dinner, like an aperitif. They are also very useful to pair with seafood. More complex whites, with their characteristics, take on a greater role at the table and are perfect for pairing with foie gras dishes, fish, or white meats. In other words, they are very versatile and can be enjoyed throughout the meal or dinner. We particularly recommend DEMUERTE WHITE, a pale, brilliant straw-yellow wine with aromas of fruits and white flowers, evoking memories of canned peaches, apricots, and citrus fruits, as well as tropical notes. Its fresh acidity, light yet smooth flavour, creaminess, and body, with a long finish of white fruit and herbs, make it ideal for the aforementioned purposes.
- Rosé wines: These are fresh creations, with multiple and varied shades, that can accompany us as an aperitif or with dishes made from fish or seafood.
- Red wines: In this case, the classification usually revolves around the age of the wine. Thus, young reds, those from the current year, can be used as an aperitif or to pair with white meats and fish. Red wines with aging, those with up to 9-12 months of maturation, pair well with red meat dishes with sauce, stews, whether made with meat or fish. Finally, long-aged reds (Reserves and Grand Reserves), more complex wines, slower to drink, require more substantial dishes such as roasts or game (fowl, deer, venison, wild boar, etc.). In this case, we recommend DEMUERTE ROSÉ, a wine with a Provençal rosé tone, crystalline and bright with salmon reflections. It has a delicate floral and herbal aroma, with delightful intense notes of strawberry and cherry. It is a fresh, fruity wine, round with good acidity and a long, savoury finish.
- Red wines: Here, the variety depends on the origin, grape types, different production methods, aging times, etc. Therefore, we need to distinguish between young reds, those from the current year, which pair with aperitifs, white meats, and fish; and reds with aging, which go better with red meat dishes with sauce, stews, whether of meat or fish.
